today on cooking raw it's desserts chocolate mousse without chocolate key lime pie and truffles stay with us hello I am Caroline and this is my daughter chanita we welcome you to cooking raw on cooking raw we eliminate the heat and emphasize the natural food so on today's show what we're going to do is prepare some delicious amazingly nutritious raw food desserts yes we are and these desserts are what the goon free their wheat gluten free they're delicious they're delicious they're nutritious they're nutritious there's no dairy right there's no butter no there's no refined sugar there's no refined sugar it's just all natural goodness with a lot of what nutrients and vitamins and minerals that our body needs and our promise you you will not miss the whipped cream so the greatest that we're going to use to prepare our first dish which is a chocolate mousse is water we have some raw cashews some dates that are marinated in agave a little bit of sea salt this is vanilla carob powder some fresh avocados some agave and then we also have some fresh blueberries some fresh raspberries and also some raw walnuts that will look that we will later use for toppings so the first thing that we're going to do to prepare this dish is make the cashew milk so the three main ingredients of wheat that we need to use to make the cashew milk is some fresh water about two cups of cashews or about a cup of cashews that's a cup of cashews okay and then a little bit of a gothic a little bit of agave so should we go ahead and do that why don't you go ahead on it we're just gonna dump the yep right into the blender and then we're gonna add about three cups of water about three cups of water because we want this to be a little thick if you were going to use this on your cereal add four cups of water make a little bit it sort of be like skim milk okay okay and then we're going to add about a couple tablespoons or a tablespoon of agave yep that's that's good that's good and then the next thing to do is to simply blend simply blend okay all right okay okay it looks like milk that's right it doesn't taste like milk I think it tastes better than milk so those people who are lactose intolerant this is great you can also add like a little vanilla a little cinnamon do whatever you want to do this you can also turn this into a smoothie but that's not what we're doing today voila like magic a cream blender okay so to continue making this amazing chocolate mousse we're going to slice open the avocado so I'm going to give to my mom and then I'll work on these two so mom would you like the big knife or the little knife of course the big nice little one all right thank you thank you so so so how did you come up with this idea to make chocolate mousse out of using avocados well you know ooh this one isn't so good but part of my training they teach us how to use different foods to create different recipes and avocados you can do just about anything with this and not only to make the chocolate mousse but of course ah America this is okay it's okay to make mistakes in the kitchen yes yep so but you can just do anything chocolate mousse you can do banana pie just use avocado which is a very good fat it is good for you it's heart healthy and as you can see I'm not a professional when it comes to scooping out the the inner part of the avocado I'm making a complete mess but this goes to show that you do not have to be a professional to make raw dishes taste amazing because this chocolate mousse is going to be really good we have some marinated dates that's right and they're marinated in agave right oh god why did we do that well just intensive by the the sweetness a little bit and it also softens the date and agave is just really good for you it's one of those low glycemic Oh sweetener yes yep again a gobby comes from a plant yes and there are several hundred species of agave plant of in yes there are yeah it sort of reminds me of what is that uh that our vera plant oh okay yeah yeah so how we're talking how long do you marinate this and now as long as you want but you know anywhere you know three or four hours I can do it overnight it's not going to hurt yeah and then we're put in about what seven about about yeah about seven okay eight days in there yep sea salt and about not all of that but about just tell me when to stop okay that's good that's good okay and then you are going to put maybe why don't we start off here you want to use this winter with about a tablespoon yep that's nice go ahead okay one more one more hips keeping yeah it might be too now this is the carrot powder carapace really good mm-hmm it comes from like a bean right it goes on a carob tree that grows on a carob tree yeah and it has is similar to like chocolate yeah but what's missing is the caffeine right amazing source of fiber to amazing source of fiber vitamin E awesome for you so this is the cashew milk that we made earlier and mom just told me when to stop pouring this cashew milk in this grinder why don't you just stop right stop stop stop stop okay because we're just going to blend this up you want it to stay sort of thick and so let's see where that is right now on securely someone we have food flying over the place right and then and then let's just go here so we're gonna we're gonna stop this because we see that we need some more cash you know okay stir this up not much so stir this up a little bit it smells amazing okay pour and as you see in cocking raw it's all about experimentation you know you add some ingredients and then you see later that you need to add some more that's more it's okay okay and then we're gonna blend this again I like it sort of thick yeah okay okay guys eyes right yeah let's try it okay that's right I think it's good mm-hmm but it does need to be a little bit more smoother okay and we're just gonna add just a little bit more okay for the fourth time thanks for watching Mike more nita more and more and more and more okay cool cool cool cool cool cool night okay and this is going to do it this is it this is it here you go okay do that okay this is it this is it this is it so we're ready to put it into our serving cup all right and I'll use the spoon here mm-hmm it's gonna scoop some in there huh and then what I'm gonna do is layer this with my topping so I'm gonna put some fresh blueberries filled with antioxidants raspberries most definitely and I'll put some mold on top what I do my spoon what did you know here we go mm-hmm BAM mm-hmm Wow oh that looks good and you know what you can also put this in the fridge cause it's a little warm right now but you can put this in the fridge if you like to have it chilled a little bit mm-hmm and then we're gonna just top this off with some more of this fresh blueberries yes fresh raspberries and just a couple little walnuts to give it that extra little crunch there it is for the chocolate lovers we made that delicious chocolate mousse parfait now we're going to go ahead on and make an even delicious juicer Shaw okay that's a good word more delicious let's go more delicious pie right I'm ready you're ready I'm ready so what are the ingredients the ingredients Oh faithful and old faithful is what avocado good fat we're also going to use fresh Kiwi fresh lime juice vanilla sea salt agave and we may or may not use the marinated date okay or cashew milk we'll see so what's going to make the determining factor of whether or not we use the cashew milk or the marinated dates how are you that's how I feel and that's what it's about people how do you feel what do you like and so I won't know until we get there all right well let's try to get there let's get started okay so the first thing I am going to do is cut slice the avocado okay and while I'm doing that why don't you go ahead on and put in maybe about not all of that maybe what happens yeah half of that can we use do we have to use fresh lime juice could we use like stuff that's already been squeezed and ready to roll in their grocery store you most definitely can and that is up to you whether or not you're going to use fresh I prefer fresh I think it has a nicer taste to it and flavor and so I like fresh now with this agave you really don't need a lot so maybe like a teaspoon let's start off with the teaspoon that's probably maybe a little bit more okay there it is okay and why don't you can you tune out the avocados and here it is people this is really nice again these are natural products natural ingredients nothing process us nothing preserved there's no condensed milk yeah we're using natural sugars natural fat everything is good for your body when you look at today when the doctors are telling people listen to it stop eating so much processed and preserve mm-hm and here it is processed or preserved and it's quick and easy and that's what I like it yeah there's one thing I don't like about cooking in the traditional sense is being in a hot kitchen I guess is hot and sweaty I hate that here I'm not sweating I'm just cool chillin that's right a little sea salt okay a little and why don't we blend that up and see what's happening okay and high-power okay I always like to taste a little bit okay let me taste this I'll taste it with you hmm okay it's a little tart yeah why don't we definitely need some sugar let's add some dates there you go okay but it's coming along nicely I think so too I think so and I put about what yeah put one more Maura to bear it in there yeah okay that's one half okay and I think let me get some of this avocado off I'm just gonna add just a little bit of this cashew milk you were filling cashew milk now yes I'm feeling cash okay all right okay Lin oh that is what happens when you open the lid filling on my birthday we're gonna add a little bit more of this cashew milk still let let close to and let it well we made I'll stand back well you stand you stand back while I blend this up I need to taste okay hmm that is so much better now somebody else might want it a little bit sweeter but this is fine but it is good it's a nice balance between tart and sweet yes and that was work that's right button person okay there you have it we have our very healthy key lime filling and we're going to pour it in this bowl wow wow wow wow okay and there you have it all right there you go America this is our key lime filling key lime filling and next up is our crust alright Wow so we just finished two amazing desserts right right we did the chocolate mousse parfait mm-hmm we did and we did the filling for the key lime pie all right so now what we're gonna do is make the crust okay I'm ready you are you ready yes so what are the ingredients for the quest the ingredients are we're gonna use some agave we're gonna use some sesame seed I'm sorry some tahini and tahini is may be made with sesame seeds we're also going to use our dates vanilla sea salt raw walnuts almonds and sunflower seeds okay quick and easy all right and we're gonna do do all of that make that in our food processor so if you could do me the honors and make sure there are no seeds in there so when you get the dates push the dates from your grocery store they come with the seeds and I'm so one thing to do is just just pull them open and pop out pop off the sea like that and do not be afraid of these nuts these nuts are filled with nutrients good fat they're heart-healthy full of fiber full of fiber a little pinch of sea salt am i adding dates or just some of them well why don't you go ahead on and add all of those okay why are you doing that I'm gonna a little vanilla as you can see I'm using my fingers you can use a spoon if you like to yep most definitely and some of these dates were marinated and agave too yes yes yes okay and a little tahini and that is it and what does the Cheney do in this recipe it gives it like a little different flavor to it it has a strong nutty taste to it okay and I like that all right so that it for the ingredients that's it for the ingredient Jassim agave I add it don't need any Gavi right now okay so we got that I'm just gonna add just a little bit more some FARC's do you know why some power seats are named so far seats no and I would love to ask but why I want to tell you after we blend this ok ok so there you go if cincy are you looking for in this mixture I'm looking for something that sticks together okay and this is sticking together so basically what form a ball if you wanted yep you can easily form a ball you can do that and if it's not sticking together then you just add there now they may be no well taste it first number one you want to taste it taste it to see if it has if it's sweet enough for you if it has they're the right flavors so let me taste this first but if it wasn't binding together what would you do to make it to make sure that it's binding together if I have enough dates the sweeteners they're what I would do is just continue the blend because once you blend it emerge all of those you know the the stickiness from the dates and the nuts the oil from the nuts okay those things would bind yeah like they're doing now okay you see what I'm saying yep here that is okay and we're going to put our crust right in here there we go there we go that's it for a cross all right so then I think we move on to it Oh putting the crust in the container I'm sorry okay and so yes what I've done here is this little pie crust and I use some saran wrap to line it this will help us help me and you get your crust out really easy so you can be easier to put on the table so you have some oh that's a good idea daughter that is an excellent idea press press press press and if you don't have one of these containers there's something else that you can do to make a crust like you know just use your fingers to form one and wait most definitely you can you can actually use your fingers to form one and a plate you can use a bigger pie crust but for those people who you know may be single yeah don't want to make an entire pie because in an 8 inch pie crust because they're not going to eat it all is too much here is a one that you can do for just one or two servings for you and somebody else so if we're not gonna use all that pie crust can we keep it in the refrigerator for or put in the freezer for like a couple days or so and it'll still be good most definitely you can put it in the freezer and it'll last for a couple of weeks and what you can also do is that you can take this your crust and oh now you have a nut truffle okay okay there you go there's certain a lot of different things you can do with this you can cover this with some shredded coconut and carrot powder then you can take the carrot powder and put some of this in and make it a chocolate truffle okay so does this nice end in the fridge for a little bit two to four yep four to form yep okay so that's exactly what we're going to do we're going to sit this put this in the fridge and let it get cold and it will just bond together so we've made the crust now what we're going to do is finish it off with making our key lime pie so and our chocolate mousse pie all right we're gonna put some of this in here spread it out now that looks really beautiful to me it looks like you added all of this milk and sugar and eggs and butter yet and none of that in here not nothing but healthy and deliciousness Wow I think that is beautiful do that then I'm going to add our Kiwi I bet she's like what happened to the koe we're here it is and I'm going to add the blueberries and the raspberries to mine just randomly add a light color mm-hmm I like the contrast of this - that is pretty mm-hmm and there we go like an artist okay oh well this let me take one of your little call right in there well maybe two there you go Wow isn't that beautiful beautiful key lime pie and chocolate mousse pie delicious filled with antioxidants hmm filled with deliciousness all right and that's how we cook rah oh my god chanita I think we did a great job and I hope you think we did a great job too of making these four amazing desserts we have
